Ingredients:
2 lb Perch
1/2 ts Salt
1/4 ts Pepper
1/2 c  Flour
2 tb Cornstarch
1 c  Water
1    Slightly beaten egg yolk
1    Well beaten stiff egg white
Corn oil
CUCUMBER BUTTER

Carefully wash fish; drain. Sprinkle with salt & pepper: set aside.
Combine flour & cornstarch. Blend together water & egg yolk; stir
into flour mixture until smooth. Fold in beaten egg white. Dip fish
into batter; deep fry at 350 for 2-3 minutes, depending of size of
fish, or until fish is golden brown. Drain on paper towel. Serve with
Cucumber Butter.
