1 tb Sesame seeds toasted 1 tb Cornstarch 5 tb Soy 3 tb Plum jam 1 tb Fresh minced ginger 1 Pressed garlic clove 2 lb Chicken pieces
Cut eight 8″ squares of foil; set aside. Combine seeds, starch, soy,
jam, ginger & garlic in pan. Bring to boil over med heat, stirring
constantly. Remove from heat & cool slightly. Stir in chicken, a few
at a time, to coat each piece well. Place 1 piece, skin side up, on
each foil square. Divide & spoon sauce over chicken. Fold ends to
form package; crease & fold down to secure well. Place bundles, seam
side up, in single layer, on steamer rack. Set rack in large pot or
wok of boiling water. ( Do not allow water level to reach bundles.)
Cover & steam 30 minutes or until chicken is tender. Serve
immediately.
