Ingredients:
1 lb Pinto beans -- dried 3 qt Water 1 cn Tomatoes -- (1pound) 1 lg Onion -- chopped 8 sl Bacon -- cut in 2" pieces 3/4 c Celery -- sliced 1 1/2 ts Salt 3/4 ts Cinnamon 6 tb Sugar 3 tb Vinegar
Wash beans; place in 6 qt. kettle with 3 qts. water and bring to a simmer.
Cover; cook 4 hours, or until tender.
Mix remaining ingredients with beans and cooking water. Place in 4 qt.
casserole; cover and bake in 350 oven 2 to 3 hours or until done. Add
water if necessary.
