Ingredients:
4    Navel oranges, peeled and
White pith removed
1 sm Red onion, finely chopped
1 c  Fresh lime juice
1 c  Chopped fresh cilantro
1 tb Minced chipotle peppers
1    Glove garlic, minced
Salt & Pepper to taste

Working over a medium bowl to catch the juice, cut the orange
segments from the surrounding membrane, letting the segments fall
into the bowl. Add onions, lime juice, cilantro, chipotle peppers,
and garlic. Stir to combine; season to taste w/S&P. (Can be prepared
ahead and stored, covered, in the frig for up to 8 hours.)
