Ingredients:
2 lb Fresh fish or seafood (one Or a combination) 2 tb Olive oil 1 md Chopped onion 3 Pressed garlic cloves 3/4 ts Salt 1 tb Soft bread crumbs 1 sm Chopped tomato 1/2 c Minced parsley 1/2 c Dry sherry 1/2 c Water
Saute fish or shellfish in olive oil over med heat, just until
delicately browned. As soon as fish has started to brown, add onion,
garlic, salt & bread crumbs; cook 1 minute. Add tomatoes & parsley;
lower heat & simmer 3 minutes. Add sherry & water; simmer,
uncovered, 3 minutes longer. Serve alone or spoon over hot rice.
