In a 7 x 11 inch baking dish, combine garlic, oil, soy sauce, paprika and
pepper. e on HIGH until the garlic softens, about 30 seconds. Cut
each potato lengthwise into 6 wedges. Toss with the garlic mixture to coat.
Microwave on HIGH, re-arranging the wedges twice, until the potatoes are
tender, 15 to 18 minutes. Variations: Herbed Potato Wedges – add 1 T minced
fresh rosemary or 1 t dried to the garlic mixture. Deluxe Potato Wedges –
drain excess oil from the cooked potatoes and return them to the baking
dish. Sprinkle with 1/2 c shredded Cheddar cheese, 1/4 c minced red
peppers, 2 T thinly sliced scallions and 1 T chopped ripe olives. Microwave
on MEDIUM until cheese melts, 3 to 4 minutes.
