Ingredients:
3/4 c Italian black olives,pitted 1/4 c Capers; drained 1/4 c Anchovy fillets 1/4 c Extra virgin olive oil 4 tb Lemon juice; fresh squeezed
In food processor or blender, mix all ingredients together to obtain a
smooth spread, about 10 seconds. Serve this olive paste “peasant caviar” in
a bowl as a side dish to be spread on rustic Italian bread for picnics,
barbecues, or a buffet appetizer. Chefs tip: to pit, place olive on a
board and press with a knife blade. The pit should easily be removed with
your fingers.
