Ingredients:
2 c Russett potatoes, peeled and -cubed 1/4 c Water 2 Cloves garlic, minced 1/2 c Skim milk (or evaporated -skim milk for creamier -texture 1 tb Fresh chives Salt and fresh ground pepper -to taste
Combine potato, water and garlic in two-quart e safe casserole
dish. Cover and microwave on high 11-13 minutes or until potatoes are
tender. Stir every 5 minutes. Mash potatoes until smooth. Add milk to
potatoes and beat on medium speed with mixer until smooth. Add chives and
stir.
