Ingredients:
3 lb Red snapper fillets 4 Slices lemon 1 sm Onion sliced 1 c Celelry, chopped fine 1 Large carrot, grated 2 qt Water 1 sm Onion minced 3/4 c Chili sauce 2 ts Salt 1/4 ts Pepper 1 c Mayonnaise
Bring water to boil in large kettle. Add red snappes, lemon, sliced onion,
sald, and pepper. Continue to boil for 20 min. Drain fish; cool and flake.
Toss fish with minced onion, celery, carrot, chili sauce, and mayonnaise.
Adjust salt and pepper to taste. Chill overnight.
