Ingredients:
1/2 c Sugar 2 tb Cornstarch 3/4 c Cold water 1 pt Fresh blueberries 1 Pack (8oz) cream cheese 3 tb Confectioners sugar 1 ts Vanilla 1 (8") graham cracker pie Crust
Mix sugar & cornstarch in medium sized saucepan. Stir in water until
blended. Add 1 cup blueberries. Stir over medium heat until mixture
thickens & comes to a boil. Reduce heat & simmer 2 minutes, stirring
constantly, until berries release their juices. Remove from heat &
stir in remaining berries. Cool to room temperature. Beat cheese,
confectioners sugar & vanilla in bowl until well blended. Spread
over bottom of crust. Cover with blueberry mixture. Refrigerate 2
hours or until well chilled.
