Ingredients:
3 lb Red or white onions
1 ts Salt
4 tb Virgin Olive Oil
2 tb Balsamic Vinegar
12    Coarsely chopped fresh sage
Leaves
Cracked pepper

Preheat oven to 350. Spray gratin pan with oil. Slice onions into 1/4 inch
slices. Separate into rings. Toss in gratin pan with above ingredients.
Cover with foil. Bake for 30 minutes. Stir and recover. Cook 15 more
minutes. Stir again and leave uncovered. Cook 15 more minutes. Onions
should be brown and caramelized.
