Ingredients:
2 md Oranges 1 lg Ripe avocado 1 Green onion -- incl Top:sliced Salt & pepper CUMIN DRESSING 2 1/2 tb Olive oil 1/2 tb Red wine vinegar 1/2 tb Orange juice 1/2 ts Sugar 1/8 ts Ground cumin 1 sm Clove garlic: pressed
Using a sharp knife, cut peel and all white membrane from oranges. Cut
oranges crosswise into 1/4″ slices. Peel and pit avocados; cut lengthwise
into 1/2″ wedges.
Arrange orange slices and avocado wedges on a platter. Pour cumin dressing
over them. Sprinkle with onions. Season with salt and pepper to taste, and
serve.
CUMIN DRESSING: Whisk together olive oil, red wine vinegar, orange juice,
sugar, ground cumin, and garlic. Cover and let stand for at least 1 hour to
let flavors blend. Stir to reblend before using.
