6 sweet potatoes, peeled and cubed
2 leeks, chopped
2 onions, chopped
4 rib celery, chopped
2 cups chicken broth, low sodium
1 Tbsp parsley flakes
1 tsp tarragon
5 cups water
1 tsp black pepper
1 13 oz can fat-free evaporated milk
2 Tbsp chopped chives
Directions:
Combine all ingredients except milk and chives in slow cooker. Cover and cook on low 10-12 hours, or HIGH 3-4 hours. Stir in milk during last hour; if desired, mash potatoes before serving and garnish with chives.
