Ingredients:
4 c Flour 1/3 c Sugar 2 ts Baking powder 1/4 ts Salt 1 Egg, beaten 1 c Canned or fresh coconut milk Or milk 1/2 c Butter/margarine, melted 1 ts Vanilla extract 2 c Grated unsweetened coconut 1 c Currents or raisins (optional)
Preheat oven to 350 degrees F. Sift dry ingrediants into mixing bowl,
blend in egg, milk, butter and vanilla. Mix in coconut and
currents/raisins if used. Turn out onto floured board and knead
slightly. Shape into 2 loaves and pat into 2 buttered med. loaf
pans. Bake 40-45 min., until a toothpick in the center comes out
clean.
