Ingredients:
Drippings for greasing 1 1/2 c Yellow cornmeal 1 1/2 c Rye flour 2 ts Baking soda 1 ts Salt 2 Eggs 1 c Buttermilk 3/4 c Dark molasses
Arrange 2 racks in oven. On low one place a baking pan and fill with
hot water. Heat oven to 200. Generously grease other pan with
drippings. In large bowl mix well: meal, flour, baking soda and salt.
In small bowl beat eggs; stir in milk, then molasses. Pour liquid
into dry and stir just until moistened. Do not overbeat. Pour batter
into pan and smooth out. Cover with a baking sheet. Place on top rack
directly above water. Bake 12 hours. (It will be ready after 4, but
the old-timers seemed to feel “the longer the better”.)
