Ingredients:
3 Eggs 1/4 ts Salt 1 c Milk 3/4 c Flour 3 tb Butter Filling: 1/4 c Butter 1 c Tiny scallops 1 c Baby shrimps 1 c Cooked crab meat 2 c MORNAY sauce 2 c Grated cheddar
Crepes: Whip eggs until very light. Add salt & milk. Fold flour a
little at a time. Lightly grease a heated skillet with a little
butter. Pour in enough batter to cover bottom of pan. Rotate pan to
spread batter into thin layer. Grill crepe until brown. Turn over &
cook 30 seconds & remove to plate.
Filling: Preheat oven to 350. Heat butter in pan. Add scallops &
saute. Add shrimp & crab. Simmer 3 minutes. Stir in sauce. Simmer 5
minutes. Spoon 3 Tbls. filling onto each crepe & roll. Place in
greased casserole. Sprinkle with cheese. Bake 15 minutes.
