8 oz Package Neufchatel cheese 1 1/2 c Swiss cheese; shredded 1 tb Parsley; snipped 2 tb Cream sherry 1/3 c Almonds; toasted and chopped Parsley; snipped Sesame seeds; toasted Red grapes (optional)
Let cheese stand at room temperature about 1 hour. In a small mixer bowl,
beat cheeses and 1 tablespoon parsley till well blended. Gradually add
sherry, beating till nearly smooth. Stir in almonds. Cover; chill 1 hour.
With hands, mold mixture into log shape, about 10 inches long. Press
additional snipped parsley and sesame seed into cheese log, forming
decorative rows of each. Wrap the log in moisture-vaporproof wrap. Chill.
Or, label and freeze, if desired. If cheese log is frozen, let thaw 1-1/2
to 2 hours at room temperature. Unwrap. Serve cheese log on platter with
assorted crackers; garnish with red grapes, if desired. Serves 10 to 12.
To serve 25: Prepare Sherry-Cheese Log as directed except double all
ingredients and prepare two logs.
