1 Cinnamon stick - (3 inch stick) 2 ts Cardamom seeds; (measure - after removing pods) 1 ts Cloves, whole 1 ts Mace -=or=- 1/2 ts Nutmeg, freshly grated
Roast spices separately and grind in a blender, a coffee grinder or with a
mortar and pestle; add grated nutmeg, if used.
