Ingredients:
4 sl Bacon -- diced
2    Garlic cloves -- minced
1/2 c  Picante sauce
1 tb Lemon juice
1/2 ts Ground cumin
1/2 ts Salt
4 c  Spinach leaves
Torn or coarsely chopped
1    15-oz can
Drained
1 md Red bell pepper -- short,
Thin strips
1 md Tomato -- diced
2    Green onions with tops
Sliced diagonally in
Black beans -- rinsed and

Cook the bacon till crisp. transfer to paper towels. Drain off all but 2
tablespoons of the fat from the skillet. Cook garlic in the drippings for
1 minute. Add picante sauce, lemon juice, cumin and salt. Bring to a
boil. Reduce the heat and simmer for 1 minute. Combine spinach, beans,
red pepper, tomato and onions in a large bowl. Pour hot dressing over
vegetables. Toss. Top with the bacon. Enjoy.
