Ingredients:
1/2 c Butter at ROOM TEMPERATURE 1 c Sugar 2 lg Eggs 1 ts Vanilla 2 ts Baking powder 1/4 ts Salt 2 1/2 c Blueberries (mash 1/2 c with -a fork) 2 c Flour (I used 1 c flour and -1 c mixed whole grains per -my usual) 1/2 c Milk
Blueberry Quickbread
Preheat oven to 375 degrees. Grease a loaf pan. Beat butter until creamy.
Beat in sugar until pale and fluffy. Beat in eggs, one at a time. Beat in
vanilla, baking powder, and salt. Mix mashed berries into batter.
Fold in half of the flour with a spatula, then half the milk. add remaining
flour and milk. Fold in remaining blueberries.
Place in loaf pan and bake around 50 minutes, until pick comes out clean.
