Servings: 12 Muffins
Ingredients:
1 c All purpose flour 1 c Bran 1 tb Baking powder 1/2 ts Salt 1/2 ts Ground cinnamon 1/2 ts Ground nutmeg 1/2 ts Ground allspice 1/2 c Firmly packed brown sugar 1/2 c Chocolate chips 1 Egg, beaten 3/4 c Milk 1/4 c Vegetable oil 1/2 c Pumpkin pie filling
Combine flour, bran, baking powder, salt and spices. Add brown sugar and
mix until no lumps remain. Stir in chocolate chips. Combine beaten egg,
milk, oil and pumpkin; mix thoroughly. Add to dry ingredients all at once
stirring just until moistened. Do not overmix. Spoon into greased muffin
tins, filling 2/3 full. Bake at 375 F. for 25 minutes. Remove from pan to
cool.
