Ingredients:
3 lb Pan-dressed smelts 1/2 c Milk 1/2 ts Salt 1 1/2 c Flavored bread crumbs 1/4 c Freshly grated Parmesan or Romano cheese 1/3 c Melted butter Paprika
Wash & dry fish. Combine milk & salt: combine bread crumbs & cheese.
Dip fish in milk, roll in crumbs. Place fish in a single layer in
well greased 15*10*1″ baking dish; pour butter over fish & sprinkle
liberally with paprika. Bake in 500 oven 8-10 minutes.
