Ingredients:
2 tb Butter 1 Chopped onion 1 Minced garlic clove 2 Chopped slices of bacon 2 c Diced cooked chicken 1 tb Lemon juice 1/2 c White wine 3 Tomatoes, peeled & chopped 2 lg Firm papayas 1 Green apple, sliced 1/4 c Ricotta cheese Paprika Hot sauce
Melt butter in saucepan & add onion, garlic & bacon. Saute for 5
minutes until onion is soft. Stir in chicken, lemon juice, wine &
tomatoes. Simmer for 5 minutes. Peel the papayas & cut them in half
lengthwise & scoop out seeds. Arrange papaya halves on a baking dish,
cut side up. Heap chicken mixture into each half. Decorate each with
apple slices & 1 Tbls. of ricotta. Sprinkle with pinch of paprika &
bake in a 350 oven for 40-45 minutes. Serve with hot sauce.
