Ingredients:
1 c  Hot water
1/3 c  Shortening
2 c  Flour
1/2 c  Sugar
1 tb Cinnamon
Salt
2 ts Baking powder
Oil for deep frying
1/4    Cinnamon
1/2 c  Castor sugar

Melt the shortening in the hot water. Stir in the flour, sugar,
cinnamon, salt & baking powder. Mix well. Roll into a ball & chill
the dough for at least 1 hour. Heat 1″ vegetable oil to 375 in a
deep fryer or skillet. Break off small lumps of dough & roll into
balls. Deep fry for 3-4 minutes until brown. Lift out of hot oil with
slotted spoon. Drain on paper towels & cool for a few minutes on
rack. Mix cinnamon & sugar together in a bowl. Roll warm cinnamon
fritters in the sugar mixture to coat them completely. Serve warm.
