Ingredients:
1 Box favorite stove-top Stuffing 1 Onion, chopped -- coarsely 2 Cloves minced garlic 1 lb Chopped eggplant, squash -- Or whatever 25 c Olive oil 5 lb Grated cheddar cheese
Prepare stuffing per directions. Saute onion and garlic in olive oil till
brown. Add other veggie and sauted till soft. In a casserole dish, combine
stuffing and vegetable mixture. Mix well. sprinkle top with cheese. Cook
at 350 until cheese is melted and bubbling.
