Ingredients:
2 tb Olive oil 3 oz Onions, roughly chopped 1 oz Each of raisins & currants 1/2 ts Each salt, gournd ginger, Mace & saffron 1/4 ts Ground cloves 1/2 c Dry white wine 1/3 c Wine vinegar 1 oz Sugar 3 oz Wholemeal or wholewheat Breadcrumbs 1/3 c Water
Gently cook the onions in the oil till they are solft. Add the fruit &
spices & cook for a few minutes. Melt the sugar in the wine & venegar
& add this to the onion & fruits. Simmer all toghether, covered for
15 minutes then process. Reutrn the mixture tothe pan & add the
breadcrumbs & enough water to make a thick but not claggy sauce.
Adjust the seasoning to taste & serve with the roast meat.
