Ingredients:
1    Ripe mango (1 lb), halved,
Pitted peeled & cut in small
Pieces
2 tb Minced red onion
2 tb Fresh lime juice
1 tb Minced crystallized ginger
1/4 ts Crushed coriander seeds
1/4 ts Crushed red pepper
1 tb Chopped fresh mint

Gently mix all ingredients, except mint, in a bowl until well blended.
Cover & chill at least 2 hours or up to 4 days. Stir in mint 15
minutes before serving.
