Ingredients:
2 cups uncooked lentils
2 qts water
2 apples cored peeled and chopped
1/4 cup golden raisins
1/4 cup nonfat lemon yogurt
1 tsp curry powder
1/2 tsp salt

Directions:

Combine lentils and water in a large saucepan. Bring to a boil over high heat. Reduce heat and simmer 20 minutes, stirring occasionally. Stir apples and raisins into saucepan; cook 10 minutes or until lentils are tender. Drain well. Place lentil mixture in large serving bowl. Stir in yogurt, curry powder, and salt until well blended.
