Ingredients:
3 md Ripe tomatoes; peeled and -chopped 2 md Cucumbers; peeled, -coarsl.chopd 1/2 c Water 1/4 c Wine vinegar 1/2 Onion; chopped (opt.) 3 tb Olive oil 1 Clove garlic; minced Salt; to taste 3 sl White bread; cubed Finely diced vegetables Parsley; for garnish Hard-boiled eggs, chopped; -for garnish
Combine tomatoes, cucumbers, green pepper, water, vinegar, onion, olive
oil, garlic and salt in batches in blender. Blend on Medium until smooth.
Increase speed to High. Add bread, a little at a time thought hole in top.
Stir down. Chill thoroughly. Garnish as desired. Can serve with parsley and
egg garnish. We like to eat this with croutons.
NOTES : This recipe tastes like Gazpacho that we ate in Spain. Thickened
with
bread.
