Ingredients:
2 lb Pan dressed skinned rex Sole 1 ts Salt 1/4 c Sugar 1 tb Cornstarch 1 1/4 c Fresh orange juice 1 tb Grated orange rind 1 tb Butter Sliced orange, avocado & Green seedless grapes (for Garnish)
Arrange fish in lightly oiled shallow baking pan. Sprinkle evenly with
salt. Mix together sugar & cornstarch in saucepan; add orange juice &
cook, stirring constantly, until clear & thickened. Add orange rind,
lemon juice & butter: heat. Brush fish with small amount of glaze;
broil3-4″ from heat for 8-10 minutes. Garnish platter with orange
slices, avocado slices & green grapes; serve with remaining sauce.
