2 c Whole-wheat flour 2 ts Baking powder 1 tb Honey 2 tb Applesauce 2 c Apple juice Or water, nut milk, rice Milk 2 ts Egg Beaters® 99% egg Substitute -- * see note Mixed with 4 tb Water
Stir dry ingredients together. Mix egg replacer with water. Add honey,
applesauce, and remaining liquid. Mix well. Add to dry ingredients. Stir.
Pour batter onto hot nonstick griddle. Cook over medium heat, turning once
when bubbles come to the surface and the edges are beginning to dry.
FOR WAFFLES: Use same recipe as above. Let stand 5 minutes to thicken
slightly. Pour batter onto preheated waffle iron. Cook until lightly
browned, about 5 minutes. (Time will vary slightly, depending on your
waffle iron.) Keep warm in 200-degree oven on bare racks until ready to
serve. Waffle iron may need to be lightly oiled before using, to prevent
sticking.
