Ingredients:
2 1/2 -3 lb fryer chicken 1/4 c Butter 1 c Diced mango 1/2 c Diced peaches 3 Strips lemon rind 1 1/4 c CHICKEN STOCK 1 tb Lemon juice 1/2 c Heavy cream Salt & pepper
Preheat oven to 350. Fry chicken in butter until brown on all sides.
Add mango, peaches, rind & stock. Cover & bake 1 hour. Remove chicken
from pan & keep warm. Remove rind. Add juice & cream. Season to
taste. Bring sauce to simmer & reduce until thick. Pour over chicken
& serve.
