Ingredients:
1 lb Pike fillet 3 tb Butter 1 sm Diced onion 1/2 Diced green pepper 1 Diced celery stalk 1/2 c Tomato (peeled, seeded & Chopped) 1 1/2 c Heavy cream 1 c Grated swiss cheese 1/2 c Bread crumbs 1/2 ts Salt
Heat oven to 350. Wash & dry fish. Place in greased casserole. Heat
butter in pan. Add onion, pepper & celery; saute until tender. Add
tomato & simmer until liquid has evaporated. Spoon over fish. Add
cream & sprinkle with cheese & crumbs. Bake 30 minutes.
