Ingredients:
1/4 c Sugar 1 1/2 tb Cornstarch 1 cn (13-oz) crushed pineapple in -light syrup 1/4 c Water 1 ts Grated lemon zest 1/2 ts Vanilla extract
In a 1-1/2 quart e-safe dish, combine sugar and cornstarch. Mix
well with a fork. Drain and reserve the syrup from pineapple. Slowly add
the reserved syrup to the sugar/cornstarch mixture, stirring well until
smooth. Stir in the crushed pineapple, water, lemon zest and vanilla. Cover
the dish (leave a small vent if you cover with plastic wrap) and microwave
on HIGH (100% power) for 4-1/2 to 6-1/2 minutes, or until mixture thickens.
Stir every 2 minutes.
