Ingredients:
1/2 c (1 stick ) butter 1 3/4 c Sugar 2 Eggs, lightly beaten 1 ts Baking soda 1/4 c Sour cream 1 c Mashed banana (about 3 small Bananas) 1 1/2 c Cake flour 1/4 ts Salt 1 ts Vanilla extract
Cream butter and sugar and add lightly beaten eggs. Dissolve the
baking soda in the sour cream and add to the creamed mixture. Beat
well and add mashed bananas, flour,salt and vanilla. Mix well. Pour
in greased and floured 9-inch square pan and bake at 350 degrees for
35-40 minutes, or until cake tests done. Cool pan on wire rack.
Icing: 2 tablespoons butter 1 cup confectioners sugar 2 tablespoons
strong hot coffee 1 teaspoon cocoa powder 1/2 teaspoon vanilla extract
Beat butter with sugar, then add coffee,cocoa and vanilla. Beat until
smooth. Spread on cooled cake.
