Ingredients:
1 c  Brown rice flour
1/3 c  Soya flour
2 ts Baking powder
1/2 ts Mixed spice
1/2 ts Ground cinnamon
1 c  Unprocessed rice bran
1/3 c  Brown sugar
1 c  Mashed banana
1/2 c  Sultanas (golded raisins)
1 c  Soy milk
1/2 c  Chopped dried apricots
2 oz Dairy-free melted margarine

Prepare oven to 420F, prepare pans. Sift flours, baking powder & spices
into bowl, add remaining ingredients; stir until just combined. Spoon into
pans & bake for about 35 mins or until cooked. Dust with sifted icing sugar
if desired. Makes 12 muffins. Icing sugar = confectioners sugar.
