Ingredients:
2/3 c Chopped ripe tomato 1/3 c Chopped honeydew melon 1/3 c Chopped fresh pineapple or 8 oz. can crushed Pineapple, drained 1 tb Finely chopped fresh Cilantro 3 tb Fresh lime juice 1 ts Olive oil 1/4 ts Salt
In small bowl, combine all ingredients; mix well. Cover with plastic wrap;
let stand at room temperature 15 minutes. Serve as a relish for grilled
fish or meat. Makes 1 1/4 Cups
