2 c Sugar 1 c Corn syrup -- light 1/2 c Water 1/4 ts Food coloring -- if desired
ea oil of cinnamon or peppermint ea or wintergreen Butter
an 8×8 pan. Combine water, sugar, corn syrup in a heavy 2-quart pan. Cook
over medium high heat, stirring till sugar dissolves. Clip candy
thermometer on pan. Stir occasionally and cook over medium heat until
thermometer reaches 290 degrees. Quickly stir in coloring and flavoring
and pour into prepared pan. Let cool 10 minutes; then strat scoring the
candyinto fairly small squares with a spatula ( a clean putty knife works
great). Dont break through the film of the candy. Keep re-marking lines
until spatula can cut to the bottom. Cool completely. Can dust with
confectioners sugar. Store tightlycovered.
