Margaritas De Toronja (grapefruit Margaritas)
Moisten rims of cocktail glasses with cut grapefruit. Swirl in mound of salt to coat edges. Combine grapefruit juice, tequila, triple sec and cracked ice in blender. Blend until smooth. Pour into prepared glasses. Place a grapefruit quarter on each rim.
Low-fat Eggnog
Heat milk, canned milk, eggs, and sugar over medium heat about 10 minutes, until slightly thickened. Do not boil. Stir over a bowl of ice water 2 minutes. Stir in vanilla; cover and chill 4-24 hours. Add more skim milk if needed to achieve desired consistency. Top with ground nutmeg just before serving.
