Mexican Chicken Casserole

Cut chicken in bite size pieces. Combine soups, tomatoes, chicken stock, salt and pepper. In a 3 qt casserole, layer corn chips, chicken, tomato mixture, onions and cheese in the order given. Bake at 350~F for 45 mins. May be frozen. Makes 8 servings.

Cheesy Salmon Supper

Mix all ingredients except soup and milk. Bake in a loaf tin or a casserole dish in a 350F oven for 40 – 45 minutes. Remove from pan. Combine soup and milk, heat and pour over the loaf as a sauce.

Zippy Beef Casserole

Preheat oven to 350. Cook and stir meat until brown; drain off fat. Cook macaroni as directed on package;drain. In ungreased 2 qt. casserole, mix all ingredients, except potato chips. Cover, bake 40 minutes. Uncover; sprinkle with crushed potato chips and bake 5 minutes longer. 4-6 serv.

Sausage Brunch Casserole

Prepare evening before.Cook sausage & drain thoroughly on paper towels.Beat the eggs & evaporated milk slightly.Add sausage,cubed bread & cheddar cheese.Pour into 9 x 9″ casserole.Cover with foil.Refrigerate overnight.Bake uncovered for 45 minutes or until firm in a preheated 350 degree oven. Veal And Wild Rice Casserole

Saute veal in 1/4 cup margarine until lightly browned; drain and set aside. Saute 1 cup chopped onion and 1/2 cup chopped celery in 3 tablespoons margarine until tender.
