Hamburger Corn Casserole

Servings: 1 Salt and pepper to taste Brown hamburger and onion. Layer noodles, corn and hamburger in buttered casserole. Cover with soup. Repeat layers. Season with salt and pepper. White sauce may be used with soup. bake for 1 hour at 350 degrees. Makes 6-8 servings.

Scalloped Spinach

Wash spinach thoroughly. Drain; cook with a little water in covered pot, cover moderate heat 8-10 mins. Drain; chop spinach. Add milk, beaten eggs, 1 1/2c of crumbs, melted butter, salt and pepper; mix well. Sprinkle remaining 1/2c crumbs and the chopped bacon on top. Bake in 350 F oven 35 mins.

Ham And Corn Custard

1. Saute onion in drippings until tender. 2. Beat eggs in a bowl; add milk, ham, corn, parsley and seasonings. 3. Stir in onions. 4. Pour mixture into a buttered 1-quart casserole. 5. Bake in preheated 350F. oven 30 to 40 minutes, or until custard is firm.

Three Bean Casserole

Lightly brown bacon and onion in large skillet; remove from heat. Stir in all ingredients except the Parmesan cheese. Put mixture in well-greased casserole. Sprinkle with Parmesan cheese. Bake in 350 degree oven for 30 minutes.

Mexican Beef Casserole

Brown beef; add onions, peppers and cheese. Sift together meal, salt and soda. Combine sifted mixture with beaten eggs, buttermilk, oil and corn. Pour half of the bread mixture in a deep greased skillet or casserole dish. Add meat mixture and top with remaining bread mixture. Bake at 350 degrees for 45 minutes.
