Shell shrimp; sprinkle with lemon juice, Worcestershire sauce, and 1 teaspoon salt. Melt butter in a large frying pan; add onions, green pepper, celery and garlic Saute about 5 minutes. Add other ingredients, except shrimp mixture, and cook covered over low heat about 20 minutes. Add seasoned shrimp; cover and cook about 5 more minutes.

Poached Orange Roughy

Cut fillets crosswise into strips about 1/2″ wide. In large skillet, cook celery & onion in oil until tender. Arrange fish over vegetables. Sprinkle with pepper. Cover fish with tomato & lemon slices. Combine water, sugar & vinegar & bay leaf. Pour over fish mixture. Cover & simmer 8-10 minutes. Remove bay leaf before serving.
