Creamy Lo-cal Mayonnaise
Simmer together all ingredients except oil & lemon juice. Scrape the simmered ingredients into a blender. While blending, drizzle in the oil. Stir in the lemon juice. Chill. Alternative: Replace oil with 3 tb tahini OR use 1/4 c cashews.

Mardi Gras Salad
Wash cauliflower and scrape carrots. Parboil each for 1 min. Remove, drain, and cool. Break cauliflower into bite-sized pcs. Slice carrots in 1/2″ pcs. Drain juices from beans and pimento. Mix all ingreds. well and place in covered bowl in refrigerator. Allow at least 12 hr. to marinate.
Blackberry Dressing
Rub berries through fine sieve or food mill to remove seeds & render pulp & juice. Combine juice, pulp & all ingredients except oil in a small saucepan. Cook, stirring over low heat until sugar is dissolved. Allow to cool & whisk in oil.
