Peanut-chile Sauce

Saute the green onion, garlic and ginger in the oil, 3 to 4 minutes, until soft but not browned. (I used the micro.) Add the stock and bring to a boil. Reduce heat and stir in the remaining ingredients. Simmer until thickened (5 minutes in micro, or 10 on stove).

Hotted Honey Rub

Combine all ingredients in a bowl. Mash until smooth. Makes about 1/3 cup.

Bubbas Cocktail Sauce

Combine all ingredients; cover and chill.

Honey Mustard

Combine all ingredients in a small bowl with a wire whisk or beater, till smooth. Put into a small non-metal container and refrigerate overnight. Stir before serving.

Warm Cucumber/red Onion Relish With Mint

Heat 2 tablespoons oil in large saute pan. Add cucumbers; saute until lightly colored, about 2 minutes. Add onion and salt and pepper to taste; saute until vegetables just turn translucent, about 2 minutes longer. Turn cucumber mixture into medium bowl; stir in vinegar, mint, and remaining olive oil. Check seasonings and serve.
