Salsa De Tomate Verde (cruda)

Remove the paper husks from the tomatillos. Rinse thoroughly. Chop coarsely. Add the tomatillos to the blender along with the garlic, chiles, salt and water. Pulse until the ingredients are chopped finely but not blended. Stir in the onion and coriander. Serve slightly warmed.

Speedy Spam Dip

In bowl or food processor fitted with metal blade, blend together SPAM, onion, and jalapeno pepper until smooth. Stir in mayonnaise. Cover and chill 1 hour. Serve with chips of crackers.

Dijon Party Dip

Combine sour cream, mayonnaise, Dijon mustard and onion. Add seasoned salt to taste. Chill at least 1 hour to blend flavours. Pour into serving bowl. Garnish by swirling a small amount of mustard onto surface of dip. Serve with an assortment of cut up fresh vegetables. Makes 1 1/2 cups (375mL) of dip.

Olive Tapenade

Chop and mash the anchovies on a cutting board. Put them into a bowl and mix with the olives and worcestershire sauce. Blend in the mayonnaise and add all the rest of the ingredients, blending well. Cover and chill. Makes about 2 cups of dip. SUGGESTED DIPPERS: Scallions, French Bread, Seafood
